Karaktär

Fruktig, komplex och aromatisk doft med inslag av citrus, äpplen, örter, lime, smörkola, nötter, honung, kryddor, fat och en rökig mineralton. Fyllig, komplex och smakrik med en krispig, balanserad syra och välintegrerad fatkaraktär. Lång harmonisk eftersmak med angenäm bitterhet av grapefrukt och fin mineralitet.

Tillverkning

Druvorna skördades för hand mellan 15 februari och 7 mars. Druvorna pressades skonsamt i hela klasar och musten fick sedan spontanjäsa i franska ekfat. Naturlig spontan malolaktisk jäsning. Vinet har lagrats 9 månader på sin jästfällning i franska ekfat, varav 52% var nya och resterande del var 1-3 år gamla fat. Vinet har sedan lagrats ytterligare 7 månader i ståltank.

Lagring

Vinet kan drickas ungt, men kan med fördel lagras fram till 2030 eller ännu längre under gynnsamma förhållanden för att få en riktigt komplex och mogen chardonnay.

Serveras vid 10-12°C till rätter av fisk, skaldjur, fågel eller fläsk.

Drink Date: 2028 - 2043 The 2023 Heytesbury Chardonnay reveals all the poise and balance we expect from the season. It is awesome. This feels totally weighted on the back palate. The fruit intensity, coupled with powerful acidity and phenolic presence, fully penetrates beyond mere "flavor experience" and dives deep into the senses; the only option left is to ride that wave until it slowly fades. It's a persistent, sophisticated wine of latent power and patience. While this is released two years from harvest, it doesn't start to show its complex potential until around five years from harvest and far beyond that. It's slow to emerge and slow to age. This is a 100% Gingin clone Chardonnay, matured in French oak barriques, 52% new, for nine months, with seven months blended in tank prior to bottling.

Characteristic smoky nose (a touch of warm, fresh pork crackling in there!). It’s a wine that leads with structure, unflinchingly conchoidal, as if it had been formed in the depths of the earth. Even the acidity feels lithographic, rock crystal-like in its transparency, but so fine it feels as if it might snap on your tongue. Flavour is interstitial, almost subliminal. When you reach for it, it’s like reaching for the dapples dancing between leaves, or a shaft of sun coming from an open door – your fingers fall through, touching nothing, but it’s still there. The wine tastes like light: so bright you’re squinting; salty like the lick of sun on skin; warm as summer; cold as the glitter of frost on a blue-sky winter day. And then the finish is like a long, long pause. Filled with the silence of thoughts.

Drinking Window: 2025 - 2038 Complex on the nose, it engages and demands full attention. There’s the classic Heytesbury wild edges, wrapped around a firm classy core. Flint, citrus blossom, toasty perfumed oak, gentle spice, dried ginger, preserved lemon, dried thyme, pink grapefruit, curry leaf and oat biscuit. A little kefir lime in there for good measure. The palate is revelatory in its mouth-filling perfume, salty haze and pillowy core of fruit concentration. A filigree of layers, fine phenolics and detailed texture, sea spray acidity and a cushioning of oak to carry the fruit’s narrative. Delicious as it is, but will offer plenty for those that wait. Made from 100% Gingin clone, with 52% new French oak for nine months, followed by seven months in tank.
