Karaktär

Elegant, komplex och harmonisk doft med inslag av mörka körsbär, svarta vinbär, hallon, röda vinbär, björnbär, plommon, rosmarin, mynta, ceder, kaffe, oliver och fat. Smakrik, medelfyllig och elegant med en fin tanninstruktur, en hög välbalanserad syra och vackert välintegrerad ek. Lång harmonisk eftersmak med en tydlig men finstämd mineralitet. En elegant, frisk och transparent årgång.

Tillverkning

Druvorna skördades för hand med Cabernet Franc i början av september och efter det Cabernet Sauvignon i slutet av månaden fram till 4 oktober. De sorterades manuellt och avstjälkades försiktigt innan de skonsamt pressades. Musten fick sedan spontanjäsa i temperaturkontrollerade ståltankar med regelbunden överpumpning. 13-17 dagars skalmaceration. Spontan malolaktisk jäsning. Vinet har lagrats 24 månader i franska barriquer.

Lagring

Vinet kan drickas nu, men kan också lagras ytterligare 10 år eller mer, beroende på hur mycket mognadstoner man önskar.

Serveras vid 16-18°C i stora bordeauxkupor till eleganta rätter av fågel, lamm, kalv eller nöt, gärna med inslag av svamp, örter och rotfrukter. Vi föreslår rosastekt ankbröst med puylinser, porcini och rosmarinsky, Pappardelle al ragù di cinghiale - långkokt vildsvinsragu, lammracks med rosmarin, timjan, vitlök, cannellinibönor, grillad aubergine och en koncentrerad lammsky, rosastekt kalvytterfilé med jordärtskockspuré, smörstekt karljohanssvamp, rostad schalottenlök, svart tryffel och en lätt timjandoftande kalvsky eller den toskanska klassikern träkolsgrillad Bistecca alla Fiorentina med cannellinibönor, salvia, grillad radicchio och rosmarinsrostad småpotatis. Som vegetariskt alternativ föreslår vi grillad portobello med puylinser, rotselleri, svartkål och svart tryffel. Vinet passar även utmärkt till lagrade hårdostar som Pecorino Toscano DOP stagionato, Pecorino di Pienza stagionato, Pecorino di Fossa, 30-36 månaders Parmigiano Reggiano, 24 månaders Comté eller Gruyère Réserve. Dekantera gärna vinet 60-90 minuter före servering.

This is a classic vintage of an Italian icon now celebrating its 50th vintage. The Tenuta San Guido 2018 Bolgheri Sassicaia lays out a familiar blueprint that borrows from the proven track record of this landmark estate that extends into the hills just beyond the Tyrrhenian shores of Tuscany. This vintage is crystalline and pure in its delivery, and if you are familiar with previous editions, it is impossible to mistake this wine for anything but Sassicaia. The growing season started off cool and wet but turned to warm and dry conditions comfortably before the harvest. Cabernet Sauvignon with Cabernet Franc in a supporting role deliver a graceful mid-weight texture that holds back style-wise in terms of phenolic density. The wine's careful balance is achieved thanks to the nuanced character of the fruit, the present acidity, the well-managed structure and the contained alcohol. The palate is lifted and bright, the finish is polished and long, and the wine skips over any heaviness on the mid-palate. The bouquet is especially intriguing with a very lively plummy fruit element that is enhanced by baker's chocolate, pepper spice, iron ore, caramel and pie crust. There is also a green character that adds positively to the bouquet with aniseed, tea leaf, soya, menthol rub and black olive. The fruit maturity is spot-on with no elements that feel over or underripe. Overall, the 2018 Sassicaia weighs in with a svelte frame and long persistence. Moreover, it is distinguished by the archetypal elegance and pedigree of the classic vintages of the past. This new release gives you much pleasure to await. Drink Date: 2024 - 2045

Lustrous mid ruby. Subtly perfumed but not sweet and still a little subdued. There are some hints of tobacco leaf, but these really add rather than announcing fast development. A shimmer of oak but more like eucalyptus and becoming more pronounced and lifted with aeration. Lots of juice, suave and elegant but not without concentration. The palate is a little less complex than the nose, but that is complaining at a high level. Jewel-like red fruit and coating tannins on the finish. Ready now but will go on for quite a while. Refined and complex, this red is all about finesse and restraint, starting out with floral and black currant flavors that build steadily on the palate, with olive, cedar, tobacco and spice notes adding detail as this lingers on the terrific finish. Needs five to seven years to fully emerge. Cabernet Sauvignon and Cabernet Franc. Best from 2025 through 2045.
