Karaktär

Komplex, harmonisk och något floral doft med inslag av mörka körsbär, svarta vinbär, blåbär, björnbär, kaffe, salvia, rosmarin och fat. Smakrik och elegant med en fin tanninstruktur, en hög välbalanserad syra och vackert välintegrerad ek. Lång harmonisk eftersmak.

Tillverkning

Druvorna skördades för hand med Cabernet Franc i början av september och efter det Cabernet Sauvignon i slutet av månaden. Druvorna sorterades manuellt och avstjälkades försiktigt innan de skonsamt pressades. Musten fick sedan spontanjäsa i temperaturkontrollerade ståltankar vid 27-28°C med regelbunden överpumpning. 15 dagars skalmaceration. Spontan malolaktisk jäsning. Vinet har lagrats 23 månader i franska barriquer.

Serveras vid 16-18°C till eleganta rätter av lamm, nöt eller vilt, exempelvis rosastekt duvbröst och confiterat duvlår med puylinser, svamp och rotselleri, lammracks med rosmarin, Karl Johan, smörstekt svartkål och rotselleripuré, kalventrecôte med Karl Johan, salvia, tryffel, grillad schalottenlök, Pommes Anna och en lätt kalvsky eller naturligtvis den toskanska klassikern Bistecca alla Fiorentina serverad med cannellinibönor och grillad radicchio. Som vegetariskt alternativ föreslår vi grillad portobello med puylinser, rotselleri, svartkål och svart tryffel. Vinet passar även utmärkt till lagrade hårdostar som Pecorino Toscano stagionato, 30-36 månaders Parmigiano Reggiano, 24 månaders Comté eller en Manchego Gran Reserva.

Very few vintages of this legendary Tuscan wine deliver the immediate joy, richness and complexity found in the Tenuta San Guido 2023 Bolgheri Sassicaia. Tasted both before and after its January 2026 bottling, this is a wine that feels uncannily open and generous in its youth, a rare trait for Sassicaia, which is famously inscrutable at this stage. The 2023 vintage was marked by a cold winter and above-average rainfall followed by a severe outbreak of downy mildew that damaged leaves, forcing brutal fruit selection and resulting in a 20% reduction in yields. Only the estates willing to make these sacrifices succeeded, and the best wines rank among the most compelling and elusive of recent years. The blend includes 13% to 14% Cabernet Franc alongside Cabernet Sauvignon, with the Franc playing a decisive phenolic role that reinforces elegance, linearity and brightness. Aromas unfold with wild sage, rosemary and dark fruit before moving into crushed stone minerality, rose petal and a finely spiced spectrum of pink peppercorn, nutmeg, anise, cardamom, bergamot and blood orange, joined by a delicate note of mentuccia romana, sweeter and gentler than classic mint. The palate shows beautiful softness framed by chalky tannins and mineral tension. Its acidity shines bright and guarantees long cellar aging potential. The wine remains fluid and flexible in the glass as different facets of the bouquet emerge. Like the legendary 1985, 2023 was a difficult and stressful vintage shaped by a cold winter, yet it stands as proof that great pressure can indeed give birth to diamonds. Drink Date: 2027 - 2060

Deep, shaded blackish garnet. Very distinctive and high-toned. Savoury. Really very unlike the sweetness of so many others. Not like red bordeaux but more appetising than most. There are definitely tannins there in profusion, but it’s a serious wine that unfolds, as I know, in the bottle. Well sculpted. Drink Date: 2029 - 2045

Menthol, eucalyptus, iron and Mediterranean scrub notes mingle with blackberry, black currant and licorice flavors in this dense and firmly built red. With air, this turns supple and fluid, picking up sweet spice accents. Nonetheless, this tightens up on the finish, where the fruit, mineral and balsamic elements reign. Cabernet Sauvignon and Cabernet Franc. Best from 2029 through 2048.
