Fruktig och komplex doft med inslag av solmogen persika, citrus, vita blommor, cedro, vita vinbär, kryddor, örter och kex. Smaken är torr och frisk med mycket finess och elegans. Lång, mineralrik eftersmak.
Druvorna skördades mellan 2-3 oktober. De pressades mycket skonsamt och musten fick sedan jäsa i ståltank vid 15-20°C. Vinet har lagrats på sin jästfällning i rostfria ståltankar fram till sommaren då buteljering sker.
Serveras vid 10-12°C till rätter av fisk, skaldjur, fågel eller fläsk, gärna med asiatiska inslag, så länge de inte är alltför kryddstarka.
Drink date 2026-2038. Intense cedary-citrus aroma, marked by a spicy/stony mineral character that is as important as the fruit. And a fumy note that I usually associate with spontaneous fermentation. And underneath all that, a hint of something fragrantly floral that I didn't expect. Creamy yet textured around a core of acid tension. A long finish.
Mineral-driven and tightly wound, this slowly opens up to reveal pink grapefruit and pear notes built around a solid spine of flint. Snap pea and pink peppercorn keep this savory and racy, with a crisp feel to the grassy finish, where there’s a kiss of smoke and petrol. Drink now through 2031.
